Cheese Scones

Ingredients

  • 450g self-raising flour

  • pinch of salt

  • 1/2 tsp of cayenne pepper

  • 2 tsp baking powder

  • 110g chilled butter, cubed

  • 240g grated cheddar cheese

  • 200ml milk, plus 2 tbsp for glazing

Directions

  • Heat the over to 200C / gas mark 6. Line a baking tray with baking paper.

  • Sift the flour, salt, pepper and baking powder into a bowl and mix together.

  • Add the butter and rub with your fingertips to make breadcrumbs. Add 200g of cheese and mix well.

  • Make a well in the centre and add enough milk to give a soft but firm dough.

  • Flour a work surface and roll out the dough to around 2cm thick. Cut out scones with a 8cm cutter and put on the baking tray.

  • Glaze with a little of the leftover milk and sprinkle on some extra cheese.

  • Bake in the oven for 15-20 minutes until golden brown and cooken through.
