Chicken Garlic Nachos

Inspired by the signature nachos of [Hermanos Cocina Mexicana] in Concord, NH. (https://www.hermanosmexican.com/).

Ingredients

  • 3-4 chicken breasts

  • 1 can chicken broth

  • 2 tsp cumin

  • 1 4 oz can green chiles (chopped)

  • 1 4 oz can of sliced jalapenos

  • 1/2 cup canola oil

  • 1 lemon

  • 1/4 cup jarred or minced garlic

  • Monterey jack cheese (shredded)

  • Restaurant style tortilla chips

Directions

  • Add chicken breasts, chicken broth, green chiles, sliced jalapenos and 1 tsp cumin to crockpot and cook on low for 6 to 8 hours (or use prepared pulled chicken).

  • Prepare dressing by mixing canola oil, lemon juice, jarred garlic and 1 tsp cumin.

  • When chicken is done, shred and spread onto tortilla chips.

  • Cover chips with cheese and broil until melted.

  • Pull out of oven and add dressing and more jalapenos to taste.
