Ginger Cookies

This family recipe from Grand Desert, NS is always a favorite whenever I bake them. The cookies have a crispy base and a chewy center, the perfect bite!

Ingredients

  • 2 1/2 cups flour

  • 1 1/4 cups sugar

  • 1 tbsp ginger

  • 1 tsp ground cinnamon

  • 2 tsp baking soda

  • 3/4 butter or margarine, softened

  • 2 large eggs

  • 1/3 cup molasses

Directions

  • Mix dry ingredients in bowl

  • Use mixer at low speed to beat in butter, eggs, and molasses until smooth

  • Cover bowl and refrigerate at least 1 hour, until dough is easy to handle

  • Pre-heat oven to 350 F

  • With floured hands, roll dough into 1 inch balls and place on ungreased cookie sheet about 2 inches apart, and slightly flatten each ball

  • Bake cookies 10-15 min until lightly browned
