Ginger Cookies
This family recipe from Grand Desert, NS is always a favorite whenever I bake them. The cookies have a crispy base and a chewy center, the perfect bite!
Ingredients
2 1/2 cups flour
1 1/4 cups sugar
1 tbsp ginger
1 tsp ground cinnamon
2 tsp baking soda
3/4 butter or margarine, softened
2 large eggs
1/3 cup molasses
Directions
Mix dry ingredients in bowl
Use mixer at low speed to beat in butter, eggs, and molasses until smooth
Cover bowl and refrigerate at least 1 hour, until dough is easy to handle
Pre-heat oven to 350 F
With floured hands, roll dough into 1 inch balls and place on ungreased cookie sheet about 2 inches apart, and slightly flatten each ball
Bake cookies 10-15 min until lightly browned
