 
    
  Ginger Cookies
This family recipe from Grand Desert, NS is always a favorite whenever I bake them. The cookies have a crispy base and a chewy center, the perfect bite!
Ingredients
- 2 1/2 cups flour 
- 1 1/4 cups sugar 
- 1 tbsp ginger 
- 1 tsp ground cinnamon 
- 2 tsp baking soda 
- 3/4 butter or margarine, softened 
- 2 large eggs 
- 1/3 cup molasses 
Directions
- Mix dry ingredients in bowl 
- Use mixer at low speed to beat in butter, eggs, and molasses until smooth 
- Cover bowl and refrigerate at least 1 hour, until dough is easy to handle 
- Pre-heat oven to 350 F 
- With floured hands, roll dough into 1 inch balls and place on ungreased cookie sheet about 2 inches apart, and slightly flatten each ball 
- Bake cookies 10-15 min until lightly browned
