Lentils Ceviche

Ingredients

  • 30g quinoa

  • 100g cooked lentils

  • 1 yellow pepper

  • 1 red pepper

  • 1/2 red onion

  • 1 tomato

  • 2 limes or 1 lemon

  • 1 tablespoon of olive oil

  • Bunch of coriander

  • Pepper to taste

  • Salt to taste

Directions

  • Rinse the quinoa under water and rinse well. Pour the quinoa and water in a pot (use twice as much water as quinoa) and bring the mixture to a boil, then decrease the heat and cook until the quinoa has absorbed all of the water (around 10 minutes). Once is absorbed remove the pot form the heat and covert it for the quinoa to steam.

  • Chop the onion, the peppers and the tomato in cubes.

  • Chop the cilantro.

  • Mix the limes juice with the oil, and the salt and pepper in a bowl.

  • Add the quinoa, the lentils, the vegetables and the cilantro in the bowl and mix.

  • Chill it for 30 minutes in the refrigerator before serving.
