Miso Soup

A standard but subtle dish that can accompany nearly any meal.

Ingredients

  • 2 cups water

  • 1 piece of kombu

  • 2 dried shiitake mushrooms

  • 1 tbsp miso

  • 1 cube silken tofu (cubed)

  • green onions (finely chopped)

Directions

  • Soak shiitake mushrooms and kombu in water for 30 minutes to make the dashi

  • Bring dashi to a boil, then turn down heat and let simmer

  • Add miso a small amount at a time, not allowing the soup to boil

  • Add cubed silken tofu to soup, followed by wakame and green onions
