Miso Soup
A standard but subtle dish that can accompany nearly any meal.
Ingredients
2 cups water
1 piece of kombu
2 dried shiitake mushrooms
1 tbsp miso
1 cube silken tofu (cubed)
green onions (finely chopped)
Directions
Soak shiitake mushrooms and kombu in water for 30 minutes to make the dashi
Bring dashi to a boil, then turn down heat and let simmer
Add miso a small amount at a time, not allowing the soup to boil
Add cubed silken tofu to soup, followed by wakame and green onions
