Pistachio Coffee Cake

Ingredients

  • 3/4 c sugar

  • 4 medium eggs at room tempature

  • butter recipe yellow cake mix

  • 8 oz package pistachio instant pudding

  • 2 TBSP cinnamon

  • 1 tsp vanilla

  • 1 tsp salt

  • 1/2 c water

  • 1/2 c veg oil

Directions

  • Preheat oven to 350 F

  • Mix together cake mix, pudding, oil, and water

  • Add the eggs, one at a time, beating well for 8 minutes

  • Add vanilla

  • Pour half the batter into pan

  • Cut in cinnamon and sugar

  • Pour remaining batter on top

  • Bake at 350 F for 45 minutes
