Savory Buckwheat Noodles

A very quick and delicious dinner for one. Feel free to adjust the chili crisp to your spice level. You can also cook up ground pork with preserved vegetables to add, or add peanut butter or sesame paste to make the noodles a little richer.

Ingredients

  • 1 round wrapped portion of buckwheat noodles

  • 2-3 tsp Lao Gan chili crisp (to taste)

  • 1 egg

  • 1-2 tbsp chopped cilantro

  • 1 tbsp sliced green onions

  • 1 tbsp soy sauce

  • 1 tsp vinegar

Directions

  • In a bowl, put Lao Gan chili crisp, cilantro, sliced green onions, and soy sauce

  • Bring a pot of water to a boil and add buckwheat noodles

  • Cook noodles for 3 minutes

  • Pull cooked noodles out of the boiling wateer with a long-handled sieve

  • Drop the cooked noodles into the bowl with the ingredients

  • KEEP THE BOILING WATER IN THE POT

  • Turn the boiling water down to a low temperature and add the vinegar

  • Rinse the sieve and crack the egg into it, allowing the thin egg white liquid to be removed

  • Use a wooden spoon to create a vortex in the pot of boiling water and drop the egg into the water

  • Poach the egg by cooking for 3-4 minutes

  • Scoop the egg out of the water when done and place on top of noodles

  • Mix all of the ingredients in the bowl together and enjoy!
