Strawberry oat breakfast bar

A recipe that my kids love and can be easily adapted for other fruits. I often add in flaxseed, chia seeds or ground almonds into the oat mixture. Keep leftovers in fridge or even freeze for later!

Ingredients

  • 80ml honey

  • 1/4 tsp cinnamon

  • 1 tsp lemon zest

  • 1 tsp vanilla extract

  • 160g rolled oats

  • 50ml melted coconut oil

  • 20ml lemon juice

  • 100g diced strawberries (fresh or frozen)

  • 1 tsp cornflour

Directions

  • Preheat oven to 180C and line small baking tray with greasproof paper.

  • Mix together honey, cinnamon, lemon zest, vanilla extract, oats and melted coconut oil.

  • Separately mix strawberries, lemon juice and cornflour.

  • Spread half of the oat mixture evenly into baking tray. Press it down gently.

  • Spoon the strawberry mixture over the top.

  • Cover with remaining oat mixture. Press it down gently to compact oats.

  • Bake in the oven for 30 mins.
